This specific bean is grown and harvested in Puebla, the fourth largest coffee growing region in Mexico, which has a high, renowned reputation in growing high quality and organic products. Therefore, they use the Mountain Water Process for removing the caffeine, which is 100% chemical-free. The green coffee beans are immersed in pure glacial meltwater from the Pico de Orizaba in Mexico (the highest volcano in North America). This dissolves the caffeine and oils; finally, the caffeine is filtered out of the water, keeping only the water-soluble oils in the coffee, guaranteeing the intact preservation of its natural features and notes.
